Really? You’ve never had people tell you they ordered select? It seems like the first thing anyone asks when you tell them you got crawfish is “How was the size?”
Really.
To be honest, the entire idea that the crawfish are actually sorted throughout the supply chain seems like a blatant scam

Why? you think all ponds catch the same size or the size in the pond is all the same. You think the Basin catches the same size everyday?

I took that SAME class. It was held at a picnic table at the St Joan of Arc fair in Bayou Pigeon.

Place in Alexandria has been selling sacks for $20 and they have been perfect peelers

No. I just imagine that most places simply fill up the sacks with whatever comes in. Highly skeptical that most of these places are actually sorting them.
Maybe I’m just cynical

When you buy shrimp, aren't they sized per pound: 16/20, 21/25, 26/30, 70/90, etc ..
Aren't crabs sold by the size and priced accordingly per dozen: SM, MED, LG, Jumbo, etc ..?
Oysters are harvested, sorted, and sold by the size.
Crawfish are no different and also get graded according to size. The tiny one's get placed back into the pond so they can grow larger and be harvested later in the year.
A customer of mine in San Antonio bought some jumbo size crawfish (mailed from LA) to boil for his wife's b-day.

Since you know the machines, are field run just a size between peelers and selects now? I noticed a few shipping sites are now listing peelers, field run, selects, and jumbo. I highly doubt they aren’t grading anymore, I think they run everything through the machine.
I think the old days of ungraded field run is gone thanks to a lot more use of those machines and we got this small/medium size now designated as field run. If that’s the case, it’s fine, just call it a medium instead of a field run. I still prefer having more of that size over the bigger ones.

There are still a lot of crawfish that aren’t run through a grader out there. There’s no standard for size so what one retailer calls fiend run may not be the same as the one down the street. My wholesaler washes and grades everything that looks good out the boat and the rest goes to peeling plant

Or just a frickin idiot that’s trying to tell people in the crawfish industry how it works

I prefer a medium crawfish vs selects.

Yeah I think the wholesaler I have been using grades everything as well. Been to a few boils and my own and we all been shipping with the same person and got a few sacks this year in selects and field run. Field run doesn’t have any of the size of selects. Kinda disappointing. Getting a few decent size ones was always fun for the kids. Adding on the jumbo size is just kinda weird too.
