If your pineapple isn't as ripe or as juicy as you would like it to be, try this trick from Food 52 and flip it upside down. Simply saw off the top, flip it over on a plate, cover it in plastic wrap, and store it in the fridge for a couple of days.

I was told long ago that you should turn it upside down overnight before cutting it as the sugars tend to settle at the bottom and this will help spread the sweetness again throughout.
I’m not saying it’s the biggest truth, but I did test the theory once and the pineapple that was upside down overnight was by far sweeter throughout.
Since that test I have never cut a pineapple that did not sleep upside down for a night, and I buy a couple pineapples a month.
