Your discipline is impressive. I like beer a lot and lack discipline. Tell CAM & Co I said hello. I don’t think I’ll be able to do it myself.

Follow the initial burn-in instructions.
Clean it every few cooks.
Don’t slow cook fatty meat like pork belly then crank it all the way up unless you have good insurance.
Use a foil pan filled with water under grates for low/slow cooks.
Get the sear plates/grates.
There’s Facebook groups with tons of info if you’re on there. If not, find a forum.
Test your actual temp. If it’s off, there’s a way to calibrate.
Don’t leave it open in the rain.
Don’t listen to the assholes that cook dry briskets and still hate pellets.
Use it. It’s super versatile and easy/quick to crank up.

FBD and 2BD

Busy couple of weeks ahead, headed to Columbia for the game this weekend and then to Boston for work. My hotel in Boston is walking distance to Trillium so that may cause problems.

Kim tell Steve I said hello and I promise next time we are in Seattle I’ll let him drive us to all the places we didn’t get to go last time.
