When I lived out of state I used the skinless cheap sausage the few times I did crawfish boils after having live crawfish flown in. Since being back I haven't found any other sausage to be much better. To be honest, kind of like mushrooms, I just want the sausage to soak up the seasoning and not be greasy or over powering. the cheap skinless does the trick and obviously never comes out chewy or gummy due to no skin.

Hillshire Farms smoked sausage

Expensive sausage is wasted

Deer sausage sucks because all the fat boils out and it gets dry AF

Jerry Lee's Andouille. Can't beat it. Everything else is just inferior to me, even after it's been boiled with all of the seasonings.

Otherwise, regular old Savoie's is fine.
