Favorite Roast Recipes

Bought a roast on a whim today. It was on sale - normally $30 and I got it for $8. Figured why not.
Never really done a roast. Any pro tips?
Note: unfortunately my All Clad Slow Cooker doesn’t seem to be working. Need to get it repaired. So I’m looking at doing it in the oven.

- season and sear the crap out of roast
- remove roast
- deglaze with red wine
- sauté mirepoix
- add mushrooms if you like
- add beef stock
- add lots of fresh herbs (sage, rosemary, thyme)
- you can make a roux if you like your gravy thicker
- add meat back and cook in oven at 325 for 3 or so hours, depending on size of roast
That is the basics for my roast

It really depends on what you're looking for as far as the flavor. Also, what cut do you have?

I like her Italian drip roast recipe. It's the one without the tomatoes, though I add onions to the other one sometimes. Great for sandwiches.

The biggest tip I can give is that I always add smoked sausage to simmer with the roast. Brings a great flavor to the gravy.
