I make them at least weekly for Mom:
Dry
1 cup AP flour
3 tsp baking powder
1 tsp baking soda
(powder and soda both full of NA so no salt needed)
1 tsp sugar (for browning crust mainly)
can add freshly micro grated nutmeg, cinnamon
Wet
1 cup buttermilk
1 egg
3 tbl oil
then I add some flavors, usually vanilla extract, almond extract.
have used mushed bananas, cooked/uncooked apple finely chopped, bacon crumbles, berries. (in the wet mix)
One of the keys to good pancakes is to Fold the wet/dry together, do NOT go for smooth batter. Always use a preheated pan/griddle (electric range will be just under medium, gas about #3).
You can mix the dry ingredients ahead of time and store in a ziplock/tupperware for during workweek to speed things up. Add a tsp of vinegar or lemon/lime juice to cup of regular milk to acidify/fake buttermilk (apple cider vinegar not bad for pancake flavor, your sugar or syrup will offset the bitter easily).

Hard to beat the original Aunt Jemima, where you add, egg and oil. I like to add just a drop or two of vanilla extract.

It's pancakes. Dump some flour, baking powder, an egg, sugar, salt, and milk in a bowl and stir. Add more milk if too thick, more flour if too runny. They all taste the same.

Pancakes are so easy to make from scratch, it's baffling that pancake mix is so popular. It's like 8, mostly readily available, ingredients. Flour, baking powder, baking soda, salt, sugar, oil, egg, and buttermilk.
