Came here to say fricassee too. Any thing roux-based. Smothered turkey necks. Obviously jambalaya. About the only thing I don't use it for is to boil water.

My favorite thing to cook in cast iron has to either be a roasted whole chicken, thick cut pork chop or a good cheeseburger. Preheating the skillet in a very hot oven then letting the chicken cook to temp at lower heat produces crisp skin and juicy meat everytime. Throw together a pan sauce and your have a great meal with little effort.
