This is kinda random, but I can't stand restaurants who put the cheese on top of the toppings.

Is this a joke? Roux might be one of my favorite smells on earth.

When they'd make the huge batches at my old job between shifts, I'd just walk around sniffing.

That seems like an oversell

It has a neutral to good nutty smell when cooking. But it isnt the cooking process that bothers me when making a roux inside


But this thread has been derailed enough.

Me too and I've never had any issue with the lingering smell. I love the smell of lots of things. I have a kitchen for cooking, so I cook inside.

I'm looking for some new game day snacks myself. Preferably make ahead, meaning put together ahead of time. Cooking the snack before serving is not a problem as long as I can watch the game.

I've made this Sopressata and cheese in puff pastry several times. It's quite good. I've also used a good salami or good quality thin cut ham.
