I guess that would depend on if you're talking about Gameday tailgating or Gameday at home.

I watch almost all games at home now, so I love to wake up early and get a nice pot of gumbo going. The house smells amazing all day, and it's the perfect food when it's a nice cool fall day.

The hell are you doing to your roux to stink up the house? Is this yours?

Are you serious?

Cooking roux inside will make any house smell

It smells good to the person cooking over it.

Go outside and come back in its no bueno. It is cooked flour in oil

Now roux outside, then add the trinity and let the stock pot simmer inside is perfection

In an ideal world, sure. But I live in an apartment so it gets cooked inside.

After a few hours the smell of the gumbo overpowers the original scent of the roux so it still smells great in the house.

The first football game at the house means brisket and german potato salad. Followed by a week of chili with leftover brisket.
