I make gumbo year round, as I ascribe to Gris' assertion that if you have AC, it's ALWAYS gumbo weather.
No single gumbo during the year tastes as good as the one you make the first cold wet afternoon in the fall, though. You know the one. Grey skies, 40 degrees, and a constant drizzle. Heaters going, a little whiskey, and gumbo. That's the best dish of the year.

It's hard to beat a good gumbo when it's snowing outside.
I also do a white bean chili recipe that I love doing when it's cold and raining/snowing out.
There's nothing more enjoyable to waking up on a Sunday morning, seeing the snow coming down out the window, and getting a pot of gumbo going before the 1pm NFL kickoffs.

I love cooking big hot pots of gumbo or other similar dishes on days like you describe. I love cold gray rainy days.
Some other dishes I like.
Big pots of red gravy and meatballs, though I just did that last month.
Making stocks for the freezer.
Chicken soup.
Beef Bourguignon
A chicken and cornbread casserole that I love eating on a cold night.
Vegetable beef soup.
