Favorite Christmas cookie/candy recipe?

Have a Christmas get together tomorrow (today) and looking for some ideas on a dessert to bring. TIA!

We love these ginger cookies from Ina Garten. The crystallized ginger makes them great. Just add a little more oil or else they’ll be more “snappish” than I prefer.

I like to make peanut butter & cornflake candy. Super simple and quick...takes maybe 15 minutes.

1 cup sugar
1 cup light corn syrup
1 cup peanut butter
6 cups cornflakes

Bring sugar and corn syrup to a low boil over medium. Remove from heat and stir in peanut butter. Fold in cornflakes. Pour onto foil or wax paper then cut into squares.

Start with a good chocolate chip cookie (my wife makes the best, no pics), and do them half dipped in semi-seeet chocolate. Put in the fridge before putting out for guests, otherwise even messier.

Fudge, divinity, peanut brittle, haystacks all made by my grandmother. She's 90 now, this thread reminds I've got to get her recipes while I still can

yep. and don't forget the 'forgotten cookies'.

I made a huge batch last night and so freaking simple.

I had so many requests for these this year after toting them around last Christmas to parties. They are light, crispy and soft on the inside...freaking delicious.





RECIPE

4 egg whites
1 tsp. vanilla
1/2 tsp. cream of tartar
1 cup sugar
1 cup chocolate chips
1 small bag chopped pecans

(note you can put anything you want in them. the last batch i put about 1/2c of chocolate chips, 1/2c white chocolate chips and the pecans)

INSTRUCTIONS

Preheat oven to 350°F.
Add vanilla to egg whites and beat with an electric hand mixer on high until just foamy.

Add cream of tartar and beat on high until soft peaks form.

Slowly add in sugar, while continuing to beat on high, until all sugar is added and tall stiff peaks have formed.

Gently fold in the chocolate chips and pecans with a big spoon.

Line baking sheets with parchment paper, and portion out cookies. They don't need to be spaced out much.

Place cookies in the oven and turn it off about 1-2 minutes later (or immediately if you think you'll forget)

Open oven next morning & check cookies. If they are still slightly gooey in the morning turn oven on to 200 for 10-15 minutes then turn it back off and check again in a couple hours.

Store in an airtight container for a week or two

ORANGE BALLS! Best Christmas treat ever




*I recommend you double this recipe since you can't really find 6oz frozen concentrate these days.

1 lb vanilla wafers mini work.. Basically a whole package
1 stick unsalted butter
1 6oz can frozen orange juice
1 lb confectionary sugar .. About 2.2 cups
1 cup finely chopped pecans

Put wafers into 1 gallon freezer bag and smash with a rolling pin until it turns to dust.

Cream butter orange juice and sugar together in large bowl

Add remaining ingredients and mash together. Smaller balls work better, drop into bowl of powdered sugar.

Before rolling into balls, put "dough" in fridge a couple hours to make them harder and the powdered sugar won't absorb into them and disappear after rolling in it.

I found filling the sugar bowl up with 20-30 balls then shaking it around and freezing 3-4 out at a time with your hand like a cage allows you to shake the excess off while leaving perfect snowballs.

Fudge. Sugar, chocolate chips, condensed milk, vanilla. I like the walnuts in for texture.

Just made these

They are easy and addictive.

Spiced Candy Walnuts

INGREDIENTS
4 cups walnuts
3/4 cup brown sugar
3/4 teaspoon cinnamon
1 teaspoon cayenne pepper
1 teaspoon sea salt (or kosher)
1 egg white
2 teaspoons vanilla

INSTRUCTIONS
Line a baking sheet with parchment paper.

Preroast nuts at 300 degrees for 20 minutes to release oils.


In a small bowl add the brown sugar, cinnamon, cayenne, and sea salt mix until combined.

In a medium bowl toss the walnuts with the egg white and vanilla until coated.
Add the sugar mixture to the walnuts and toss until coated.

Spread the walnuts into a single layer on the prepared baking sheet. Place in the middle oven rack and bake for 20 minutes, stir and bake for another 10 minutes.

Remove from oven and let the walnuts cool. Store in an airtight container for up to 1 month.

Take my advice. Don't just get the recipes. Make the time to spend with her and make them together. ASAP. it will mean the world to her now and you in the future.

For the rest of their lives. I did and it made their day, month, year, whatever. I have treasured those memories for 20 years. Likely will pick up technique that is lost on paper also.

There are all kinds of names for these cookies, so here goes!*

Multinational Sand Tart Wedding Cocoons

1 cup butter, softened
1/2 cup confectioners' sugar
1/2 teaspoon salt
2 teaspoons vanilla extract
2 cups all-purpose flour
1-1/2 cups finely chopped or ground walnuts, pecans, almonds, black walnuts, brazil nuts, or filberts (try toasting them)

Mix butter with sugar until creamy. Add salt, almond or vanilla extract, flour, and nuts. Mix well.

Chill dough until firm enough to handle.

Preheat oven to 350.

Using fingers, shape dough into 1-inch balls. Place on ungreased cookie sheet. Bake for 12 to 15 minutes or until light brown. While cookies are still warm, roll in powdered sugar. These keep well.
Makes 4 dozen.

Date balls, lady fingers and 3 types of fudge - chocolate, cranberry and buttermilk were a given at my house growing up. And three types of fruit cake... one nasty one and two good ones.
