I like Prime Rib but I'm not usually cooking for a crowd
Is there a good way that has been tested to just cook a single piece or should I just go to a restaurant?

So you want a prime ribeye?

If you are wanting a single piece of prime rib, that's basically a ribeye steak. If you are wanting it to have the pink surface and crusty edges, then I would cook the steak sous vide and then use tongs and a cast iron to sear the edges (rather than searing the face of the steak like one would typically do)

Have the butcher cut you a small one the next time he slices rib-eyes. Maybe 2.5-3lbs. It will of course cook much faster, but you still get the same effect. Use the left-overs if there are any, for sandwiches.

I cooked prime rib for inlaws family for Xmas. It turned out excellent.
I'll find the recipe and repost but it's not hard. I did it in the oven, make sure u have a heat therm stuck in to give you an accurate reading... Once it heats that IT, take it out and cover in foil until 20 minutes before u want to serve. That is when you fire up the oven real high to sear the outside.
It's easy and fool proof.
I'll post the recipe and cook times tomorrow.
Also Google prime rib threads TD and a lot of awesome posts come up as well.

Cook a ribeye sous vide without searing it. It will eat just like a prime rib.

Yeah that's sort of what I was getting at
