Experiment with banana peppers and chorizo (pics included)

My neighbor sends over three beautiful banana peppers from their garden and ask me to come up with a zero or low carb dish. They like my cooking, so they wanted to see what I come up with.
I see this stuff called pork chorizo at the store, so decide to see what it was all about. I wanted fresco cheese, but the store didn't have it, so just simple Mexican blend
I'm at work, so I dont have access to a grill, so I roast the peppers in a black iron skillet and in the oven under the broiler.
I cook the chorizo in a pan. It was very greasy and loose. It didn't dry up like Jimmy Dean, so I added bread crumbs and some of the cheese to the sausage after cooking it.
I half the three peppers, add the meat and more cheese
Baked for 20 mins at 350, added some more cheese and parsley for garnish.

I will let you know now, the chorizo has a weird smell to it when cooked, and by all means, do not read the ingredients on the label.

I cook that Chorizo quite frequently. It's pretty darn good if prepared properly.

I just cooked it in a pan like I would brown Jimmy Dean sausage and then again in oven at 350 for 20 mins or so.

Add a dollop of sour cream and sprinkle some chopped fresh tomatoes over it and you're in bidness

The only way I can eat it is if you cook it with some onions and peppers, then scramble some eggs with it and make breakfast tacos.

Make something similar pretty often. Italian sausage works well too. Just don't use nasty green bell peppers.

You can get pretty good chorizo all over town. I typically don't buy tube meet packaged like that.

This! I bought some chorizo a while back, and made the unfortunate mistake of reading the ingredients. I now understand the phrase "you don't want to know how the sausage gets made"

Next time try some bulk Italian sausage, diced mushrooms, the trinity, and pine nuts.

Whole food sells bulk chorizo with no additives. if you're trying to eat healthy
