We've Got Soul pop up in Carrollton Station had this same dish tonight, it was pretty good.Gf had hot fried game hen which was exceptional. Really underrated pop up there.

It was pretty good, guys at worked liked it.
I was planning on using Italian sausage or boudin to stuff it, but decided on th chorizo. Something different.
I am eating healthy, so I only ate one of the 6 peppers. It was just an experiment.

Chorizo with ground beef is my new go-to for tacos.
