I mean, he couldn't understand that a PROFESSIONAL FOOD WRITER was making a tongue and cheek point by saying she was trying to be "fancy" by using fresh peas.

PROFESSIONAL FOOD WRITER

Today, the barrier to entry for being a "professional food writer" is abysmally low. Probably 2/3 of the pixels (can't say ink any more, LOL) spilled on food topics are a complete waste of energy, penned by writers with minimal food knowledge, limited cooking skills, and who haven't eaten very broadly. It's becoming harder to find expert voices who can also *write*.

Witness the recent dumbing down of Serious Eats. After enjoying that site for quite some time, I've noticed a sharp decline in quality of content.

Frozen is often better quality than what you get in the produce department.

Same goes for seafood.

I understand. I still stand by the point that the dude missed her context there and basically the whole point of the piece in his attempt at further goofy self-aggrandizement.

If we are talking about green English peas, not very many places in the Deep South. The season is fleetingly small in warm places. If you're in cooler climes, you might find them over a longer window of time.

This thread reminds me of...

So much greatness in one clip.

Just as healthy as fresh and often more easy to cook with and convenient.

Actually, they're technically usually even more nutrient dense than fresh because they're flash frozen when they're freshly picked. Fresh veggies have to go through shipping and all that rigmarole.

I always use frozen for the green pea soups I make. They're terrific and taste very fresh. I don't know that I've seen fresh at any stores before.

We used to shell the heck out of purple hull peas, but we froze most of them since the season is not that long. Fresh is great, but I use frozen way more often than fresh during the year. I buy them frozen from the farmer's markets quite often to keep on hand.

I love LeSueur very young sweet peas or Dubon petit pois in the can, as well.
