Dry rub pork rib recipe

What's yall go to seasoning for dry rub pork ribs? Wife just wants to throw Tony's on it

More years ago than I like to think about I ask the same question. Answers were all over the board. Here's what I did. I looked for all of the famous, and not so famous recipes I could find on the internet, cook books etc. Probably 40+ recipes. I wrote down each ingredient/spices... the common ones, the unusual ones and marked how many of them used....say garlic. Then I began to develop my own recipe. I kept meticulous records of what I used, and how much etc. After many trials and errors, (100+ slabs)cut in half, so 200+ taste test. I developed my own recipe that has served me well. In fact I have three.

So in short, develop your own. Even If I gave you my recipe....you wouldn't use it but maybe one time...then you would start tweaking it to suit your taste.

Like dp said, Rendezvous makes a good one though I usually add a little honey powder to it. Sweet Rub O' Mine is one of my favorites. John Henry's Pecan Rub is nice. Oak Ridge Secret Weapon is also a favorite. Malcolm Reed has a nice rub called The BBQ Rub but he always uses a base of his AP Rub first. Meat Church makes a nice rub I tried once and really liked but I can't remember the name. There are literally hundreds of options to choose from. All depends on the flavor profile you like.

Here are some ideas - Obviously, I like my two rubs.

MD’s Sweet BBQ Rub Seasoning #1 (sweet for chicken or pork)

Need

3 Tablespoons Smoked Paprika
1 teaspoon Onion Powder
1 Tablespoon Lawry’s Garlic Salt (Preferred) or garlic powder if you have no Lawry’s
2 Tablespoons Dark Brown Sugar
1 teaspoon Sugar
1/2 teaspoon salt
2 teaspoons Chili Powder
1/2 teaspoon Ground Mustard
1/4 teaspoon Black Pepper
1/8 teaspoon Cayenne Pepper
1/8 teaspoon Ginger powder

Mix all together and store in an airtight container


MD’s Beef Brisket BBQ Rub Seasoning #2

Need

1/4 Cup – Smoky Paprika
11/2 Tablespoon - Black Pepper
11/2 Tablespoon - Salt
11/2 teaspoon - Chili Powder
11/2 teaspoon - Garlic Powder
11/2 teaspoon - Onion Powder
1 teaspoon – Red Cayenne Pepper
1 Tablespoon - Dry Mustard

Mix all together and store in an airtight container


Jerk Seasoning:

Need

1Tablespoon onion powder or dried onions
1 Tablespoon Lawry’s Garlic Seasoning
1teaspoon dried thyme
1 teaspoon ground allspice
1 teaspoon ground black pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/4 Scotch Bonnet Pepper, chopped finely
1 Tablespoon Vegetable oil

Mix all together and store in an airtight container


Memphis Magic Dust Sweet BBQ Rub Seasoning

Need

3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1/2 cup American Paprika
1/4 cup garlic powder
2 Tablespoons ground black pepper
2 Tablespoons ground ginger powder
2 Tablespoons onion powder
2 teaspoons rosemary powder

Mix all together and store in an airtight container


Chris Lilly’s 6 Time World Champ Pork Shoulder Sweet Rub BBQ Rub Seasoning

Need

1/4 - Cup Dark Brown Sugar
1/2 - Cup White Sugar
1/2 - Cup Paprika
1/3 - Cup Garlic Salt
1/3 - Cup Kosher Salt
1 Tablespoon - Chili Powder
1 teaspoon - Oregano Leaves
1 teaspoon - Cayenne Pepper
1 teaspoon - Ground Cumin
1 teaspoon - Black Pepper

Mix all together and store in an airtight container


Chris Lilly’s Pork Injection

Need

3/4 Cup - Apple Juice
1/2 Cup - Water
1/2 Cup - Sugar
1/4 Cup - Salt
2 Tablespoons - Worcestershire Sauce

Mix all together and inject thoroughly (as many places as possible into meat


Food Network Sweet BBQ Rub Seasoning

Need

1 Tablespoon Cumin
1 Tablespoon Paprika
1 Tablespoon Granulated Garlic
1 Tablespoon Granulated Onion
1 Tablespoon Chili Powder
1 Tablespoon Brown Sugar
2 Tablespoon Kosher Salt
1 teaspoon Cayenne Pepper
1 teaspoon Black Pepper
1 teaspoon White Pepper

Mix all together and store in an airtight container


Beef Rub Sweet BBQ Rub Seasoning

Need

3 Tablespoon coarsely ground black pepper
1 Tablespoon granulated white sugar
1 Tablespoon onion powder
2 teaspoons mustard powder
2 teaspoons garlic powder
2 teaspoons American chili or ancho powder
1 teaspoon chipotle or cayenne powder

Mix all together and store in an airtight container


Kansas City Sweet Rub BBQ Rub Seasoning

Need

1/2 cup - Brown Sugar
1/4 cup - Paprika
1 Tablespoon - Black Pepper
1 Tablespoon - Salt
1 Tablespoon - Chili Powder
1 Tablespoon - Garlic Powder
1 Tablespoon - Onion Powder
1 teaspoon - Cayenne

Mix all together and store in an airtight container


Porker Sweet BBQ Rub Seasoning

Need

3/4 Cup - Brown Sugar
2 Cups - Paprika
1/4 Cup - Black Pepper
1/8 Cup - Salt
1/4 Cup - Chili Powder
1/4 Cup - Garlic Powder
1/8 Cup - Onion Powder
1/4 Cup - White Pepper
3/4 Cup - Lemon Pepper

Mix all together and store in an airtight container


Jeff’s Sweet BBQ Rub Seasoning

Need

1 Cup - Brown Sugar
1/2 Cup - Paprika
2 1/2 Tablespoons - Black Pepper
2 Tablespoons - Salt
1 1/2 teaspoons - Chili Powder
11/2 teaspoons - Garlic Powder
11/2 teaspoons - Onion Powder
1 teaspoon – Cayenne

Mix all together and store in an airtight container

Memphis Beef Brisket BBQ Rub Seasoning

Need

1/4 Cup - Paprika
2 Tablespoon - Black Pepper
2 Tablespoon - Salt
2 Tablespoon - Onion Powder
1 teaspoon – Red Cayenne Pepper

Mix all together and store in an airtight container


Best Odds Beef Brisket BBQ Rub Seasoning

Need

1/3 cup - Paprika
1 Tablespoon - Black Pepper
1 Tablespoon - Salt
2 teaspoons - Garlic Powder
3 Tablespoons - Onion Powder
2 teaspoons - Cayenne
3Tablespoons - Dry Mustard

Mix all together and store in an airtight container

Chris Lilly’s injection is good. I’ve done shoulders with and without. It definitely adds moisture and flavor. The salt is a little high for my taste combined with a rub. I cut that some and roll with it.

I use Melissa Cookston's (Memphis BBQ Co) as a base, try different things with it and messing with the ratios and sugars.

1 cup turbinado sugar
1/2 cup white sugar
1/2 cup kosher salt
1 TBS onion powder
2 TBS granulated garlic
1 1/2 tsp cayenne pepper
1 tsp black pepper finely ground
2 tsp dry mustard
1/4 cup chili powder
1 tsp ground cumin
1/3 cup paprika

I live in Collierville, and I feel like this is the only place I see good things about Memphis BBQ Co. I have only eaten there once a few years ago, but I did not think it was very good (in fairness I ordered brisket, and I typically never order brisket in Memphis). Should I go back and give it another shot?

Gonna bookmark this for future use as there as some good recipes in here I’d like to try. Personally, I like all of the JonesyQ rubs, but I do have my own I like to use most of the time, especially with pork. My rub is pretty sweet. I know not everyone likes a sweet rub, but here it is if you’d like to give it a shot:

3 pts light brown sugar
2 pts salt
1 pt white sugar
1 pt onion powder
1 pt garlic powder
1 pt black pepper
1 pt paprika
1 pt chili powder
0.5 pt cumin

I haven’t been there, I came across the recipe a few years ago and started messing with it and just think her base rub recipe is a good place to start your own version. Similar to a lot of other ones though.

I know she has done on the competitive circuit, which is why I came across it. Never really heard anything about her restaurant to be honest, which most likely isn’t a good thing.

Rebel BBQ rub is top notch. Just the right balance of sweet with a little spice. Their sausage seasoning is great also.

1.5 cups of cajun seasoning (Tony's, Sias's, etc)
1 cup of sugar or sugar substitute
0.5 cips of ground garlic
1 package of Lemonaide KoolAide powder ( no sugar)

You can add some cumin if you wish.
