Yes lots of time in Independence growing up. Most of the family that lived there has passed, but still visit a few times. They have a little corner store that makes some of the best Italian Sausage.

Yep. Large Italian families could add eggs to the red gravy if they didn’t have enough meat. They were cheaper than meat. It’s a way to stretch a budget.
People who tell you it’s good grew up on them. It’s just a boiled egg with red gravy over it. Nothing special. I still do it for nostalgia, not because it’s a culinary delicacy.

Fortunately our family still has roots there. Aunts, great uncles etc, and still own my parents retirement home on 20 acres between Indy and Amite. Our family members owned most houses and land on the Brickyard Road curve down by the river and it is still farmed today.

Absolutely, grew up with my Sicilian family doing it this way and carried on the tradition. I also started to break the egg into the red gravy and Poach the egg and then serve it. Family seems to like it more.

That sounds as unappealing to me as eggs in gumbo. Not a fan.

My wife does. Her paternal grandparents are from Sicily and she learned from them.
It’s different from the spaghetti I grew up eating but I like it.

My Italian friends do the eggs and put in anchovies during lent which I really like.
Also I like seven steak or rabbit in the gravy too.

Learned from Italian mommas of friends who lived down the bayou. Did it mostly during Lent but also to feed big families.
My kids love it. The eggs privide a really nice umami flavor.

I've seen it done with soft-boiled eggs. The yolk runs into the sauce and it's actually darn good.
