Do you make your own Jerk Chicken?

Is it relatively easy to make? I gonna do away with ordering it from a restaurant because it's so expensive due to demand.

I have some jerk seasoning that is mixed with oil, soy sauce, and cider vinegar to make a pretty good marinade for chicken (also good on pork and I've used it to marinate some shrimp/pineapple skewers for the grill)

I made some a few months ago and it was fantastic.

Bought the jerk spice rub from Red Stick Spice Company and after rubbing the chicken with oil, I applied the rub and let it sit for several hours marinating in the fridge.

We don't have the wood they use to smoke with in Jamaica, but I read a 50-50 mix of hickory and cherry gives you a close enough flavor. Soaked my wood chips while the coals got hot.

I made a sauce to baste the chicken with. No real measurements but it had a bottle of Red Stripe, ketchup, pineapple juice, two tbsp of the jerk seasoning, and half a habanero. Simmered on the stove for about 30 minutes until it had reduced by about half.

I basted the chicken every 15 minutes and cooked in a super hot grill, indirect heat, for about 45 minutes total.

The results were phenomenal.

We have been to Jamaica twice and indulge in jerk chicken as much as possible, including the street vendors although it may not be chicken we are eating. At any rate, this is what we use here in Houston and it is the closest thing we have found to what the taste is like in Jamaica, and I mean, it is damn damn close.....

Marinate your chicken overnight in a generous portion of this and then slap it on the grill. Grace also makes a powder that you should sprinkle on top as you're barbecuing to give the extra crispy flavor.

Love jerk chicken.

Here's a recipe for a marinade I used to do at the sorority house I used to cook at. Huge hit.


Jerk Chicken
6 to 8 green onions, diced
1 medium-sized onion, diced
2 to 4 scotch bonnet peppers or jalapeno peppers, seeded and minced
3/4 cup soy sauce
1/2 cup red wine vinegar
1/4 cup vegetable oil1/
4 cup brown sugar
2 tablespoons fresh thyme leaves
1 teaspoon whole cloves, crushed
1 teaspoon black peppercorns, crushed
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon1


Let marinate for few hours and grill up.


Girls loved it.

I usually marinate mine in KC Masterpiece Jerk Marinade to get the chicken tender and use a homemade rub for a more intense flavor.

I cook it at around 325-350 over indirect heat, and it turns out great.

I asked the Jamaican ladies that work at the Publix around the corner from my house out here in Atlanta for the same reason (wanting to make my own), and they say that they use either Walkerswood, Grace, or the JCS "Boston Jerk Seasoning"(that one was hella spicy) ... it's a matter of personal preference. If you go in any of the thousands of Jamaican markets out here, you'll see all 3 on the shelves. I've tried all three and prefer Walkerswood. I have some in my kitchen right now.
