Bolognese is better north of Rome. I prefer it in Bologna which would be the original. More of a meat sauce opposed to a red sauce with meat.

No kidding...dunno why anyone would pick Testaccio. Now if you’re talking carbonara or cacio e pepe, I can think of two or three worthy versions in Testaccio.

So many terrible things hide under the Bolognese name.....the real deal is amazing.

These qualify as representative documentation of the best Spaghetti Bolognese I have ever had.




















They came from my kitchen. However it is not open tonight.

Here is an idea

Occasionally we make it for the Billy Brumfield Homeless Shelter, along with a small salad and a roll. What we cook looks exactly like my photos because spaghetti must be spaghetti or it isn't and I could let you know when we are scheduled to cook again for the guys.

Here is the problem - They serve at 5:00 pm and only take the first 50 guys. Also they close and lock the doors at 5:30, so don't be late because some of the guys are usually waiting outside when we get there with the food. They might let you in at 5:35, but not always. We almost always bring enough for maybe 60 servings, but that is also not guaranteed.

Good Luck in your quest for good/cheap spaghetti with meat sauce.

Boo, check out the Recipe Book and cook your own. The sauces may not be true Bolognese, but likely better.

I didnt realize I was making bolognese wrong.
