I agree with most of the above but I'll add a couple of things
Seafood Alfredo
Salmon and Cream cheese pair nicely together
Pretty much any tex mex dishes including seafood could be accompanied by cheese. Shrimp fajitas, fish tacos (although these don't traditionally have cheese), crawfish enchiladas etc...
Then who can forget the coon arse bacon wrapped shrimp with jalapenos and cream cheese. It's basically kryptonite to Jews: shellfish, pork, and dairy mixed together in a spicy pepper that is cherished by Catholic Mexicans throughout the world.

Don't have it near me, but the Sopranos cook book has a grilled swordfish recipe.
Involves putting some type of cheese (mozarella?) on top of swordfish with some other stuff. Roll it up and coat in bread crumbs then throw on the grill. One of the few recipes with a picture and it looks great. Always wanted to try it.

My grandma's crawfish fettucine is amazing.

my hunch is that the climate and the high risk of spoilage of dairy before refrigeration might play into it as well.

What's the basis of the "Italian rule"?
i think areas that grew dairy animals didnt also have seafood and vice-versa. so their cuisines developed this way.
also i wonder if the catholic religion ties into this some (back in the day you couldnt have dairy or meat i think?--so if you were eating seafood on these days you wouldnt have cheese).
But in the end, 'seafood' and 'cheese' are HUGE categories. some do go together for me, just depends.
i think oysters/clams go well with several cheeses, though

It really is. I am an NO food apologist to the max. But, why ruin pristine crabmeat with cheese and heavy cream? The flavors are not compatible.

Bon Ton Cafe's Crabmeat Au Gratin. Unlike other places that serve something similar in a shallow baking dish, this place gives you a whole friggin pound of lump crabmeat. The cheese is there, along with a white wine sauce.
Cheese, wine, crabmeat...what's not to like?
