How many different people, place, and restaurants can fuggup jambalaya, gumbo, red beans around this nation. Sheez... It's simple cuisine.

I'm watching too. The guy put in a shite ton of straight cayenne and then added tomato stock. It looked like chili not gumbo

The worst I've seen was a place on the Mississippi coast's gumbo. I forget exactly how he did it, but it didn't start with a roux. Looked horrible.

Gumbo, jambalaya, and boiled crawfish are some of the simplest things to cook

The key is don't try and be a hero and do something special.

There was a place near Mobile or Fairhope, maybe, which served gumbo on that show that looked and sounded horrific.

Guy has never not raved over a dish, I don't believe.

I found the episode on youtube. LINK

He does veggies, butter, sausage, chicken and stock to make a base. Then adds just flour to "make the roux." Cooks it some, then adds tomatoes and okra.

OH gosh, that's it! Worse than I remembered. Looks and sounds bad. It's more like a sort of okra and tomatoes with chicken dish.

Isn't the chef from Louisiana?

I think when he's not too into something he just kinda says what it is. For example, "You really taste the bacon, the lettuce, and really get that tomato flavor." Well, yeah it's a BLT.

Well it's kind of his job to showcase and build-up smaller restaurants. Would be hilarious though if we just shite all over someone's special dish on national television though.
