I like them plain as well but always have used s bit of white vinegar.

If changing I like chopped fine smoked salmon with capers or salmon roe as a garnish.

I tried the cheap black caviar (Roland Black Caviar) from Walmart. It was fishy and very salty. I rinsed it off and dried it the best I could with a paper towel. That cut back on the fishiness and saltiness, but it still only tasted just ok. Like you said, only a small dollop is required.

I really wanted the red caviar, but they didn't have it. Do you have a favorite type or brand that you use?

As a side note to the OP, I wouldn't serve it to ignorant rednecks relatives. They would bitch and moan. Give them the classic DE. Office party, yes. Because screw them if they don't like it.

Not really. Martini suggest a bit of salmon roe, which I'm sure would be fine. I've seen the red caviar in stores, so maybe you can find it. I'd use just a little of any type...just an accent. And, I'd never use "the good stuff"...unless I was filthy rich.

I've never attempted to make them. After I made my post I went back and read the OP and thought the same thing.

Some people seem to make a big deal about it but I think the Thousand Island would tend to be fairly similar to the OP's ingredients. Just make it a lot faster to come up with the finished product.

The red is salmon or trout and can be found in most grocery stores and is not expensive.

American caviar is a very good product and can be found in sturgeon, paddlefish, trout, salmon and a few others - a lot is farm raised and sustainable but also very affordable. I think more people should eat it.

I do have several mother of pearl caviar spoons that were given to me. Not something I would buy.

capers on top are fine on the deviled eggs as well or even some chopped chives. A ripe avocado is a good filling.

Cousin's recipe takes a tube of Ritz crackers, pulverizes them and mixes in. Adds a great buttery flavor.
