have yall ever made a sauce piquante without vegatable oil? i wanna see if avocado oil or olive oil can be used as a substitute. will it effect the roux?

Absolutely. I don't think there is a noticeable effect personally. Others may have a different opinion. You can make a roux with just about any fat + flour. I've used olive oil and duck fat for instance.

I always use avocado oil when making a roux. Has a high smoke point.

Certainly avocado oil can be used. Try ghee too.
For what it's worth, what you think of as vegetable oil wasn't around before the early 1900s and probably wasn't in widespread use until the early 1920s, so people were definitely using "substitutes" for dishes most of our culinary history.

Listen to that guy^. He is feminine with bad genetics and has obsessed about cooking fats and unhealthiness for so long that it has consumed his entire being. All because God gave him moobs. It's a real shame. However, his recommendation of ghee is not a bad one. Personally , I would use lard.

Haven't bought an oil that wasn't animal derived, olive, or avocado in 15+ years.
I use animal fat 99% of the time unless it's on a salad.

Use hog lard or avacado oil, olive oil has a much lower smoke point. I've been using avacado oil for my roux and ot works fine.

Bacon grease for me. Any oil will make a roux . Sometimes the bacon grease roux is a bit much but I love it.
