Deer/pork burgers...

Made my own ground meat and made burgers yesterday. Tried to grill a few but the meat is not holding together well and falls apart before cooked. Anything I can add to the meat to hold it together b4 cooked?

I believe you can add an egg to the ground meat mix to get it to hold together.

Same reason you add an egg to a meatloaf mixture.

How much fat content did you add to the lean venison? I'm grinding down forty pounds of venison later today and plan to add 40% fat.

Next time, add uncooked bacon bits and egg to your raw meat, mix together, and make your patties.

The place I get my deer/pork ground meat from always recommends I get the 50/50 mix (at least). Said any less pork and the meat will be too dry. Burgers turn out good if you just press into patties and cook em. Can't work them like regular ground beef.

If you've got it 50/50 with Boston butt, and they are falling apart, I'd venture to say it is in your cooking method/prep/handling. Take out the egg, make a patty, cook on one side till it forms a crust before you flip.

nothing wrong with 50/50 but thats a crock of shite from your butcher


I know many people who do 90% deer and 10% pork fat

I do 20% pork on deer burger and 40% pork on deer sausage. No pattying issues.

I do 20-25% brisket for deer burgers. I like the brisket a lot better for burgers. Never had any pattying issues and don't add anything to the meat. Meat is not dry either.

For smoked sausage, I usually do 40-50% pork butt for fat. For fresh sausage, I usually go a little leaner.

When you do that are you grinding brisket meat, fat and all and mixing with the deer or mainly just fat?

I'm not sure if there is a right way but I just buy a whole brisket and trim a little bit (1/2 in or less) off of the fat side and grind the meat and fat up. It leaves a good bit of fat to mix with the deer.

Gotcha. Same way I've been doing the pig butt. I'm going to try some brisket next deer.

use just the yolks, not the whites...all you want is the fat not the protein

wet your hands with water before you shape the burgers
make a ball, not a patty, and then smash the ball down on the pan with a spatula

one more option is to make a paste of stale bread and milk, and gently mix that in with the meats

Ground meat get 20% pure beef fat when I do it. Never had a problem
