Most pizza here is made too fast to get it out of the oven and out of the door. Dave like double baked. He wants the cheese brown maybe a couple of burnt spots on top and a crispy fully cooked bottom. No flop.
I concur. I don't want a pizza I have to cook when I get it home but there are almost no places that cook that way in Nola. If you know of them post them. I'm the guy who loves the corner piece of lasagna because it is crunchy and slightly burned.

Shows you the amount of backing you have doesn’t mean dick in the restaurant busniness. Parish Line was an abject failure. I know Fat Boys in Hattiesburg just went out of business and I’m sure there are more to follow
