Crawfish boil -- what're your leftover recipes?

Making crawfish stew with the tails.

But we held on to all the leftover vegetables (taters, mushrooms, corn) and suasage. My initial plan was to make killer bacon potato soup.

Suggestions?

Crawfish Bisque - Use the tails to make stuffing, stuff the leftover heads. Time consuming but it pays off.
Crawfish and Corn Soup
Crawfish Jambalaya - Use the crawfish and sausage from the boil.
Mashed Potatoes with potatoes left over
Crawfish Fettucini

Breakfast for supper, make a hash with eggs over easy on top or poach some eggs in water seasoned with crawfish boil and homemade biscuits.

Garlic Bread.


Leave a stick of butter on the counter to warm up to room temp. Put all the boiled garlic into a food processor and blend till mostly smooth. Fold the garlic into the softened stick of butter, put in fridge for about 20min to firm up, then form into a log on a piece of wax paper. Wrap it up tight and then stick it in a ziplock freezer bag. Store in fridge for up to 2 weeks or freeze for a couple months.

If you were to use this butter for garlic bread, then chop some of the boiled tails up, toss them with some fresh parsley, lemon juice, a few capers and some white wine, then drizzle them onto the garlic bread and bake a couple minutes to warm everything through, you'd have a stupid good appetizer.

I made a shepherd's pie with my leftover potatoes and corn a couple of weeks ago. Browned some ground turkey, mixed the corn in, topped that with some green beans (had a can in the pantry) then made mashed potatoes and topped it all off with that. A little cheese on top, and in the oven until hot.
