Crawfish and Pumpkin Bisque

Has anyone here made this? I found the recipe on Acadiana Table and it looked interesting. Just made my crawfish stock tonight. Hate to waste it on the recipe if it is no good.

If it turns out like what is served at Houmas House, it is awesome

Saw Jeremy Langlois make it on tv one day, he stressed to make sure you get unsweetened pumpkin

The one Jeremy came up with is damn good. Usually make it once a year in the winter.

Pumpkin ripen in the fall. Crawfish are best in the spring. That's the reason I find the combination odd. It's not a flavor profile I think I would like, but I would try it.

Would it make sense if it was combined with sweet potatoes instead? SP have a similar flavor profile to pumpkin and they are generally available year round.

If you like it, you will love it. Have had many that just don't get it though.


I would say don't expect it to be your entire meal for the night. Moderation, it's really rich.

Looks great. Many years ago, I cooked a pumpkin bisque off of a recipe I found in Southern Living magazine. Didn't do the side of cheddar biscuits that they also featured... but I really like pumpkin and seek out soups and bisques when in season. I would try this one. Thanks for sharing.

Maybe substitute butternut squash for pumpkin. To soften it, boil it in stock to get the softened pulp. I would also favor adding a portion of sweet potato.

But I’m going to try this recipe verbatim before changing anything. Seems to be a unique list of ingredients.Steen’s and curry in a bisque? I’m in.
