Cracklin Tacos - Thoughts?

The idea popped in my head. Is this a thing? It would be like a crispy pork belly.

I’ve seen chicken cracklins topped with chili, cheese, onions, and jalapeños. They call them nachos, but more like frito pie. Or cracklin pie.

You make those? Look great man. When I buy cracklin they usually don't last long enough to make it to a taco...lol. Similar but different, I did a pork belly burnt end street taco for a cookoff a while back.



Topped with a grilled pineapple pico de gallo then drizzled with a raspberry chipotle glaze (Blue's Hog). Was so damn good.

I’ve made em a hand full of times,
Did the last batch all on the grill
