No way it has 5 difference cheeses because it's not cheesy. I never eat the cheese on the top, so I don't know whether it's American or cheddar. I eat around it. I also don't let them dump it on my plate. I like it in the casserole dish because it retains heat better that way and I like hot (temp) food. When they dump it, you can see that it's not a thick bechamel. The sauce runs off the crabmeat onto the plate, so basically, you get crabmeat "coated" with some sauce.

It is a very light bechamel. If you don't eat the cheese then you could order it without the cheese and the bechamel would probably lightly brown and add texture and flavor to the dish. I would not have a problem with that at all.

I love cheese. Just not on seafood 99% of the time. I can eat a nice cheese with some fruit and good bread for dinner. All washed down with a nice bottle of wine.

I think you misunderstood me. I meant people who order these awesome fajitas or tacos and ask for meat and cheese only (no sour cream, no guacamole, no salsa, no grilled onions/peppers)

That's what I said before...crabmeat au gratin done properly with a light sauce, no heavy duty seasonings and light on the cheese, if any, is very good. Same with crabcakes. If you put a gazillion things in them, they may as well not have the crab.

This doesn't bother me at all. I actually like the fajita meat without all the other items and not on the tortilla. I like to eat it right off the skillet, as is, much of the time. Sometimes, I load everything on the tortilla, but 9 times out of 10, I eat the meat and the vegetables. However, I usually eat the rest with chips or my fork, just not altogether.
I don't get upset over how other people eat their food. I just think they might be missing out on certain dishes, but that's not my problem.

I love fajita meat too. Idk if that was the best example, but I just get so sad when people refuse to eat salsa or sour cream or guacamole or lettuce :(
