Cooking a turkey on a Green Egg

So I have zero turkey cooking experience other than frying them. I want to smoke one on my XL BGE for Thanksgiving. Any of you ever done one on an egg and have any suggestions or links to a good recipe/instructions? There's so much on the web, I thought I'd just check here. I have read that I should brine it for 24 hours in advance. Is that right? What size turkey should I buy for my XL egg? Any advice would be appreciated.

Spatchcock that bird and keep an eye on your temp. You can always pull it off the BGE and finish it in the oven. A brined bird is a good bird. It worth the trouble. If you really want crisp skin let it sit on a wire rack in a baking sheet in your fridge for 24 hours before you cook it.

Is there a place in Baton Rouge that sells fresh, not frozen, turkeys? Maybe Sam's or Costco?

Get whatever size turkey for the amount of people you're feeding, there isn't a turkey so big that won't fit on an XL egg. A little smoke goes a long way with turkey, I wouldn't use more than 1-2 chunks - and don't use anything strong - go with pecan or a fruit wood. Put ice packs on the breasts for a couple hours right before it goes on the egg so the white meat doesn't dry out.

I’ve never heard of that ice pack trick.
I’m gonna try that.

Do y’all ever inject before smoking it, along with doing a brine?

I've tried brining and didn't notice a big difference in moisture - the ice packs worked better for me on that front - and not nearly as much work.

I do indirect, close the lid and don’t open until desired IT and it’s perfect every time.

use a Bluetooth temp monitor.

Easy peasy.

This guy is here in the DFW area and is friends with my neighbor. He is legit. I followed his method Wednesday of this past week and had 20 people over for a friends thanksgiving and the turkey was talked about more than any other dish. It was fantastic.
