Just got a shipment of cod and halibut cheeks from Alaska seafood. Ive got the halibut cheeks covered but was wondering if anyone had a really good, unique cod or thick cut whitefish recipe other than bake with bread crumbs.

I think it is awesome poached in a coconut milk/lime juice type deal with lots cilantro. Like you'd get in a Thai place.

Here's a version from Serious Eats.

I have no recommendations other than to go look here. The guy has excellent recipes, all good choices.

Hunter gatherer recipes

Just do a search for your game or fish variety. He does classy stuff.

This recipe isn't the healthiest, but my yankee MIL makes it and it's delicious...

Icelandic fiskibollur:
Throw about a pound of cod and a quarter onion in the food processor, process till fairly smooth. Add and egg, a little milk and a couple tablespoons flour and a little baking powder with some salt and pepper and pulse till smooth. Consistency should be very thick/stiff pancake batter. Bring a bunch of butter to a light brown and form the cod mixture into quenelles and fry till GBD. Salt when they come out.

Can have them with a curry bechamel or just brown butter.

Just like my grandma used to make and one of my favorite foods in the world

Did an Asian glaze... no recipe but soy, honey, chili sauce, some ginger, etc... maybe some 5 spice... nothing crazy. Broiled it up.

And then a cold noodle salad with more or less the same sauce as a bed for it. Mixed in some shaved Brussel sprouts, kale, etc... to green it up.

Was a nice dish if you are familiar in the flavor profiles.
