Chris’ vs Herbert’s specialty meats

Chris has a great sausage dog. I don't know if it is in their stores, but they sell it at these pop-up food trailers.

I've only bought from Hebert's for many many years. I enjoy all the products we've had from their various stores. Can't speak for Chris', but Hebert's is a sure thing in my mind.

The prices in Chris' are ridiculously high. The prices and quality at Hebert's are much better. If they have hot boudin balls on the counter, I can't resist a few.

I concur. One day the wife and I were in there looking for some beef tamales and saw they had just brought out some cracklin' to the front counter.
I asked the guy how much for 1 lb. and he said he'd give me the price of 1/4 lb.-------$7.50-----so $30 a lb., which is insane for deep fried pork fat.
Oh, and they did have tamales that came to just over $17 for a dozen as they sell those by the pound. They were good, but I don't know about $17 good.

I wouldn't know since I've been making my own for a few years now and just buy the raw pork belly, cut it up and get to cooking.

The Hebert’s boneless stuffed chicken with shrimp rice dressing is in my opinion the best culinary contribution from Acadiana, better than gumbo, jambalaya, and boudin. Whether or not Hebert’s invented the boneless stuffed Cajun chicken is open for debate, but they are at least the ones that both popularized it and perfected it. Grandfather first brought us one in the year 1988 and it has been a part of our Advent celebrations each year since. I was but four years old and I still remember that first bite. Amazing. It is the best chicken dish on Earth.

The original is in Maurice. There's one in Geismer if you're in Baton Rouge. I haven't been to that one, but my brother goes a good bit and brings us a lot of the products from there.

A couple years ago I went to Chris" and asked if they made their own headcheese. I was told yes and to come back in a couple hours as it wasn't ready yet. When I came back, they were repackaging Manda head cheese in their label. I walked out and never returned,

As a youth, I also enjoyed many of Herbert’s specialties. My Abbeville uncle would bring a couple of ice chests filled to the brim when he visited.
My last taste of Hebert’s came 10 years ago when we returned from my son’s baseball tournament in Abbeville. It was also the last visit I had with my uncle.
