I was at a friends ranch in Junction Texas last month. His other guests were 6 firemen from Houston, San Antonio and San Angelo. They made an Axis chili that was incredible. And you know what? I made one the other day. I just used the 2 alarm chili packets you can get. I started though with a green and red bell pepper and one onion chopped up. Cooked those for a bit and then added one pound of beef and one poud of bison beef. Cooked that and then added one small can of tomato paste, one can of fire roasted tomatoes, and then used beer instead of water based on instructions of the 2 alarm pack. Cooked it slow and low for most of the day. Came out great!

My wife has a couple bags in the freezer which surprisingly works well. I pick them up when in Gladewater since we don't have Brookshires here. But those Monroe in laws can bring me a few bags now that you mention it. And I recommend you smash a few over your next bowl of chili and let me know how it is.
I also take a bit if the adobe sauce and mix with sour cream. Another good topping.

Martini, I see Julio's quite often. I haven't paid attention to where, but I buy them quite often, along with the salsa. Good stuff.

Just make it like it your regular chili without beans.
If i'm making chili for hot dogs I run my browned ground meat through the food processor so I dont have big chunks of meat on my hot dog. I also maje it a little thin, more like a chili sauce.

My two cents, I use dried New Mexico and or Passila peppers with a ancho or two. Seed them first, simmer in chicken stock then purée with 3-4 cloves garlic. Use this as a base.
Pork and beef chuck , small 1/2 dice browned w . (2-3 Tbl Pure chili powder from Pendrys spice in Ft worth(I like Texas Red Dog and Chimiya) ,one - 2 yellow onions Can of Diced tomatoes pus Tomato paste which is a huge MUST. I also add 2t chocalte and a cup of strong black coffee and 1T brown sugar, a beer or two. Bake in 325 oven for two hours, check seasonings , cumin, Mexican oregano, salt pepper red pepper and a fresh Jalopeno.
