Chili for 100 people

I'm looking at making chili for around 100 folks this Saturday. This does not have to be award-winning chili and I was thinking of using a mix like 2 alarm or something similar. Does anyone have any suggestions on the amount of meat I would need or a good easy recipe for this volume? Thanks and I hope everyone had a great Christmas.

As for meat, I'd use no less than 15 lbs. of good ground meat and about 10 lbs. of beef that you can cut into small cubes---like eye of round, chuck or even rump roast.
I like a mix of ground meat and small diced beef in my chili.
I'd just figure about 1/4 lb. meat per person in the chili assuming it's a mixed crowd of men, women and kids. If mostly men, figure on more meat.
Are you having plain chili with maybe crackers or chili/macs/cheese???? Anyone else fixing anything to bring?
Good thing is, whatever, if any, is left over does freeze well. I usually cook my chili in 4 gallon batches and put it up in the freezer for later use as needed.

For that many people I would not make a spicy chili. Too many palates to please. I'm make the base chili and have options for them to add at the end of the table so they could add heat if they wished.

I’ve made 8lbs of chili before and it’s not easy getting all the meat to brown. I’d brown it off in 5lb batches then add it to a big pot with seasonings. Use dark beer for the broth- I like Turbo Dog or Shiner Bock in mine. No beans

Here's one of the first results:
30 lbs. hamburger

40 tbsp. chili powder
16 to 18 sm. onions, chopped
4 green peppers, chopped (mild)
4 tbsp. sugar
Salt to taste

Agree. I made an enormous pot of meatsauce for some fundraiser years ago and I browned all the meat first on a blackstone griddle. Worked really well.

Using a big flattop or griddle to brown the beef is a good suggestion.

Rush out and kill a big doe before Saturday and grind the whole thing up.
Honest answer tho, you're gonna need a bunch of meat, like 40 pounds or so. IIRC 2 alarm chili kits call for 2 pounds per box, so you'd need about 20 boxes of that.

You could definitely make the 2 alarm if you're not looking for something simple. Use a good dark beer for the water, add some chopped jalapeno peppers if you like and a bit of chocolate. The beer and chocolate make that mix quite a bit better, in my opinion, when you're in a pinch.

My grandmother made chili for a local drive-in theatre when I was a child.
After her sauce was cooked she would then add the raw ground beef to the sauce and slow cook.
My mother made hers that way and I now do the same.
She would say that the juices seep into the sauce adding more flavor.
The more you stir the finer the meat breaks down. Towards the end it’s easy to skim off the oil from the top.
I actually have the pot both of them used. Old hammered cast aluminum pre Magnalite.
Probably 12-14 qt. Never measured. Can easily cook 6 lbs chili. Use it for gumbo and corn soup.

I think I'm going to try this the next time I make chili. It makes sense. I usually just brown meatballs a bit for meat sauce, so the meat is not cooked and adds flavor to the sauce.

This is cool. I guess if you cook it for a couple of hours, the meat will cook just fine. I may try this next time.
