By itself, it is just salty/savory. Not a whiff of "chemical" about it.
Not sure if chemical is how to describe it. Just that it's unsual.. and very unsavory.

I like chicken salad sandwich for home or bag lunch. I don't make it. The best chicken salads are made in house by Rousses Market or Zuppardos Market in Metairie.

Mathernes is my favorite in baton rouge

Bc establishments aren’t going to spice it up like you would at home. Going to be bland 90 percent of the time at a store or restaurant. Needs a little pepper.
Mathernes is always good right out the store. Sometimes I add a lil pepper. Sometimes not.

I was in a local grocery store yesterday and picked up one of their containers in the deli that was “Rotisserie Chicken Salad—store made “. Looked like a nice product. Looked at the label:
Chicken breast meat
Water
Salt
Sugar
Sodium tripolyphosphate
Modified cornstarch
Dextrose
Onion powder
Hydrolyzed corn protein
Yeast extract
Natural flavor
Chicken fat
Disodium inosinate
Disodium guanylate
Mayo

I really enjoy the chicken salad at Jeanfreau's in Chalmette. I buy some every time i go back to visit family. A big scoop of that on bunny bread is one of my guilty pleasures.

CFA really missed the mark when they discontinued their chicken salad sandwich.
Subway actually had a good one too. Had some apple in it.

Chicken Salad sandwich--why so hard to find a good one?
Because mama didn't make it and everybody knows no one makes chicken salad like mama!
