Chicken patty poboy sauce?

Chicken patty poboys is what's on the menu in my kitchen today. The patties are from Billy's. Those suckers are delicious all by themselves. But I'm looking for some F&D Board inspiration for a topping or condiments that can take these poboys to another level. Whatcha got?

Explain these chicken patties to me and I can recommend a sauce. Breaded I assume, what seasonings do they have in them? (What do they taste like)

That's the frozen with jalapeños? I just make them as a burger. Add a nice runny over easy egg and some bacon.

They're like a Cajun chicken sausage, smashed into a patty. I typically grill them and eat like a hamburger. You should try. Several places west of the atchafalaya have perfected them.

Cool. Here's a simple Mayo based sauce I came up with:
1/2 cup mayonnaise
1/8 cup whole grain or creole mustard
1 tbs sweet relish
1 tbs Worcestershire sauce (optional)
1 tbs lemon juice
Or if you want to get more involved here's a whole grain mustard sauce that's pretty fiya:
Directions
In a small saucepan or skillet, turn heat to medium-high and add butter. After melted and foam subsides, add shallots and cook until softened and lightly browned. Add flour and cook, stirring constantly until golden brown (about 1 minute).
Whisking constantly, pour in white wine and cook until thickened. Add in chicken stock and mustard, and whisk until combined, scraping bottom of pan to release fond. Bring to a boil, reduce heat and cook until thickened enough to coat back of spoon.
Stir in heavy cream and lemon juice, and heat until warmed through. Season to taste with salt and pepper. Remove sauce from heat and use immediately.

2 Tablespoons Finely Minced Shallot
2 Tablespoons Flour
1/2 Cup Dry White Wine
1 Cup Low-Sodium Chicken Stock
2 Tablespoons Whole-Grain Dijon Mustard
1/4 Cup Heavy Cream
1 Tablespoon Lemon Juice
1/2 cup mayonnaise

Just depends on how much of the chicken patty you want to taste. You could just brush it with some pepper jelly or fruit preserves (fig) or make a steens mustard. Anything goes well with chicken. White BBQ sauce would also be good. Something different.
