For those that have bought a knife off this site, what knife did y’all go with? Opinion on quality? I’m looking at the “Anryu Blue #2 Hammered Santoku 165mm” and also looking to add a few more to have a nice collection.

Since you are in NO, try out Coutelier. They have some really great deals on knives:

The article I linked, recommends a Japanese knife that they sell for $80, and it's fantastic.

I’ve got a few nice knives that I really like. A few years ago I read an article about chefs knives, specifically which knives famous chefs use. Most had something super nice, except for Donald Link. He uses Victorinox, saying they’re sharp, he can mess it up, lose it, etc and just buy another. I bought a couple and now it’s all I use.

I've purchased a Shun chef knife and a boning/filet knife and love them. Very sharp and Shun's customer service is top notch.
