I will add that my favorite knife in the kitchen is my shun Asian chef. It is thinner and as far as chopping veggies like onions, green onions, celery, and bell peppers (sound like stuff you chop often?), it is amazing. I can see that it might not be the shape that everyone enjoys but for me it is amazing.

That's a Yoshihiro.
I have a bunch of Shun knives and an old Zwilling J.A. Henkels set I inherited. The Yoshihiro is a beautifully balanced knife. I like it much more than the Shun chef's knife but that blue carbon steel requires a little extra care. It's not a knife that you want to cut citrus with.
Caplewood will probably jump in to shite on my knives but they're good for my use.

I have several really nice knives, all well over $100. I use a Victorinox $30 knife the most.

That's definitely one of the ones I've been looking at! I want to thank everyone for their input. Alot of really good info!!. Shopping for knives is worse than grill/smoker shopping LOL!

Was just about to say this. Great knives, nice longevity. Can get a chefs knife and paring knife for under $200

I have their 10" Classic Super Slicer. I ordered it from Shoppers Choice on Coursey. Works great on larger pieces of meat. I'm happy with it. I guess I kinda decided to go the Japanese route on the Chef Knife, I have to admit I really like the way they look lol.

I have a twenty year old Wustof chef’s knife. Though I cook a lot I never really got into knives. This one works fine for me.

Have a 6" and an 8". Cook everyday and use the Ken Onion Worksharp to sharpen them about every 2 months. Nothing to complain about. Got both at TJ Maxx for a huge discount, but would pay full price in a heartbeat if these broke or were lost.
Just make sure you get the classics (Made in Germany) as opposed to the cheaper ones made in China
