Rotel Chicken Spaghetti
My mom used to make something similar to this a lot
Got to the point where we preferred it not baked though
I believe she boiled a chicken down & used stock to boil noodles in

Fixing this for my wife. Pretty picky eater. Every recipe I see has milk or half and half. Or a cream of something soup. I doubt she eats it fixed with any of these ingredients

The one LSUJML posted should still be fine with the soup omitted. It's basically rotel dip/queso with noodles and chicken anyway.

If you want it cheesy you really need milk or half and half to make it creamy when the cheese melts.
