You will never need more heat than what a gas grill supplies. I have also had big temp reductions using charcoal do to dripping from steaks.

With an high quality gas grill, this is true.

I prefer charcoal because I enjoy the process of grilling/barbecuing on a Weber. It can be a bit of challenge with certain meats but thats part of the fun. I also prefer the taste. That being said a gas grill is great for week night quick dinners. If I had to choose I would go with charcoal.

I don't want to go through the hassle and aggravation of charcoal for something i'm cooking for seven to ten minutes like a steak, chop, boneless/skinless thigh or a burger.

Same here. I have both but it's just the two of us. I only use my charcoal for big cuts of meat and smoking these days.

Go with a flattop grill

I've got one arriving friday.

Actually it's the camp chef expedition 3 burner stove with a 389 square inch griddle. It's a high quality machine that has some great accessories. I'll end up getting the pizza oven for it and expanding the griddle option to 608 square inches.

People talk about the convenience of gas but it's beyond that i think. A high quality gas grill produces excellent results.

Like you, i cook over both.

You said...

quote:

Gas excels on meats that are relatively thin and require a fast cook

A charcoal grill will cook anything just as fast. It has the capability to put out more heat than any gas grill.

So if you are saying it excels because it's easier to use I would agree. (Which is what I said in my first post about ease of use... that you said wasnt that simple)

If you are saying it excels because it does something a charcoal grill can't. Then you're full of shite.

I guess that depends on how much fuel one is willing to use.

Never even implied this.

It does what charcoal can do, easier with no down side.

No, the flavor is not the same. Not even close.

Doesnt matter if you are cooking steak, chicken, veggies, whatever. You dont get that same smokey flavor with gas.

It's almost like saying a oven is the just as good as smoker and easier to use.

On a thin piece of meat that you dont leave on long... maybe. But with everything else charcoal provides a flavor you cant get with gas.

Actually a gas grill from a performance standpoint excels over charcoal.

A quality gas grill heats consistently pretty much every time. The heat is evenly distributed across the grate. That's never the case with a charcoal grill. And when i say "quality" gas grill, i mean weber, broil king etc.

The heat is much easier to manage and dial into near exact temperatures and it's much easier to maintain that temperature. A gas grill is much better also at dealing with flare ups. With a gas grill i have much more control over the char on my food than with charcoal.

Because a gas grill cooks so evenly, i put the food on, close the lid and only open when i need to flip it. I never have to move anything around to find hot or cold spots.

From a grilling (not smoking) standpoint, a gas grill out performs charcoal at every turn. The only exception is maybe flavor and that's a personal thing.

I use my gas grill for anything that will be cooked inside of 15 minutes and the results are always fanatstic.

This is false.

You don't get that smokey flavor with charcoal.

No, it's not at all.

Why are you equating charcoal with smoking? Have you smoked long?

That was the qualifying factor

Unless you're cooking something over charcoal for longer than 15 minutes then to me, the flavor isn't that big of a deal and doesn't justify the hassle.

A 7 or 8 minute steak for instance over white hot charcoal versus gas, in terms of flavor, to me is marginal. In other words the steak isn't on the coals long enough to draw much charcoal flavor, especially if you're using lump, because lump burns so clean.

I don't think you really get the full flavor benefit of charcoal unless you're food is on for a while. Like half chickens and large cuts of beef.

That's all ease of use...

Look, there's nothing wrong with wanting something that's easy to use.

I have an electric smoker that I use pellets in.. cause it easy to use and I can set it and forget it.

But it's not the same as using real wood.
