I’ve just used a friend’s shorter ceramic knife and it cut very well. I’m wondering how a ceramic chefs knife compares to traditional. Pros and cons.

I only know of cons: kind of a PITA to sharpen, will shatter if dropped on a hard surface. Give me carbon steel any day over ceramic.

I think I'd rather Damascus steel blade...

I have one like this and love using it. Never had to sharpen it after two years. Was $25 on amazon.

They will chip if dropped and you can’t cut bones, but otherwise well worth it.

Nay. If it chips, it's ruined. Won't stand up to some of the heavier and more aggressive things you should be able to do with a chef's knife.

ceramic does nothing that a good steel blade wont.
in other words, no pro's, only con's.

Fine for veggies, but I don't care for them as an all-purpose knife. I'd much rather something that can take a beating and be honed back into place.

Have 4 ceramic knives. (2 Chefs and 2 paring)

Love cutting with them. Had one set for about 12 years and the other about 6 years. Never had to sharpen either set and they still cut amazing.

If I ever have to sharpen them just box them up and ship them back. Takes about 2 weeks from all accounts.

There are a couple of chips, but it doesn't change the cut. Also have dropped them a few times and unlike some believe, they didnt shatter into 1000 pieces.
