Cast iron seasoning

I love this board. I love cooking. Amateur here, but I’m so impressed by you guys and the great cooks of Louisiana.

I want to know everything about cast iron.

Why the term seasoning? What type of oil? Ideal care? Is soap ok? Favorite recipes?

Great links appreciated. I go to this board for everything food related and point my relatives here for anything food related. Best cooks in LA right here.

Seasoning is when you coat the skillet with vegetable oil and bake it upside down in your oven at a temp of 375° to 500° for an hour. Helps to keep from rusting and non stick help.

You are one with the cast iron when you can cook scrambled eggs and not have them stick.

It will smoke the house but it works. You can do it outside on the grill too. Seasoning cast iron is simple. Light coat of oil, burn it and repeat until black. Then fry something in it and you are good to go.

Use flax oil for all your initial seasoning. It’s a difference maker. Once it’s well seasoned, clean with one of the scrubbing sponges made for non-stick, heat on low to drive the water off, and spray lightly with vegetable oil Pam. Do NOT use soap. Ever.

Get yourself a chain mail cast iron scrubber. Cooks Illustrated has a very good cookbook called “cook it in cast iron”. It’s badically a guide for everything cast iron with a ton of recipes.

I use soap all the time on mine and have no problems. That’s a myth. If it’s seasoned properly it won’t matter.

That's what I used for my cast iron, and it works really good. Though it's not cheap oil, and I really have no other use for it besides seasoning.

I actually used it to season a 27" Blackstone griddle. After several coats, it was Maria Taylor beautiful.

This.

The trick is to do it low and slow so the oil turns to "plastic" and essentially fuses with the iron in the pores.

Of course it will eventually rub off but you can tell the difference between proper seasoning and just an oiled skillet.

GP3 LLC uses flax oil exclusively.

Whole Foods.

1) Make sure you get Food Grade product.
2) Make sure you wipe it off once you apply it (goal is to leave the thinnest-possible layer of oil)
3) Find the first episode of Alton Brown's Good Eats Reloaded online. Toward the end he rethinks the seasoning process.
