Canned beets? Why?
Fresh roasted beets are awesome finished with lemon garlic butter and fresh thyme.
Beets are like Brussels Sprouts and when you learn how to prepare them properly they're terrific.
But the sleeper is spring beet greens. I'll never forget the first time I bought fresh beets at the farmer's market that still had the tops on them.
Quick butter garlic a little slap ya mama's saute is all it takes. Best tasting greens ever.

All I had for lunch yesterday. Beets and goat cheese on water crackers.

I will eat beets in any permutation, including straight out of the jar. Ive grown my own and slow roasted them and they are great, but a jar of Aunt Nellies will suffice.

If there is a roasted beet salad on a menu I will almost always order it.
