Can someone quickly give me a BADASS salad recipe?

Off today and wanted to make my wife lunch and bring it to her today at work.

She loves salad so I'm going with this. But I want something different than the strawberry pecan raspberry vinnigerette salad we usually make.

I'm thinking a chicken chipotle ranch of some sort. I just don't want a "simple" salad.

Open to anything really.

Maybe both? Open to ANY suggestions. I throw everything in my salads personally wanted a good group/combo of items that goes well together.

I can use google but I trust this board more than pictures.

Right now my only requirements are chicken and lettuce an I don't even know what lettuce I want until I get an idea on the salad as a whole.

I like caprese or spinach with walnuts, strawberries, and goat cheese.

last night I made a salad of kale and spinach (raw .. just massaged w/ olive oil) then added raw red onion, halved grape tomatoes, feta, and chopped up green onion pork sausage (can also throw some lardons in there instead or 86 the meat all together), then made a vinaigrette of olive oil, lemon juice, minced garlic and balsamic vinegar.

Other additions that would be good are hard boiled egg, olives, pecans/walnuts.

Sundried tomatoes
Bacon
Dried cranberries
Touch of vinagrette or dressing of your choice.

buy a rotiserre (sp) chicken, cranberries and add to a spring mix. easy and good.

Already got the chicken breast thawed but the rotisserie chicken is wonder food in my house. And ironically we never use it as a course in itself. Makes great chicken salads, enchiladas, etc.

Sliced firm pear, shaved manchego cheese, frisee or other bitter greens, and decent sized chunks of crispy bacon. Simple french vinagrette w/dijon, red wine vinegar, and EVOO.

Or make a vinagrette w/steen's, creole mustard, and cider vinegar, toss with some boiled shrimp, and chop/tear romaine or iceberg. Halved boiled eggs and cherry tomatoes to finish it off.

Or make a slaw instead of a lettuce-based salad. Red cabbage, slivered celery, chopped carrots, and a chopped green apple...use a decent buttermilk dressing thinned with a little vinegar, add a pinch of sugar. Colorful and filling. If she likes more protein, top with roasted pecans.

Pick up a pound of chicken shwarma at Roman's or Arzi's. It's great for adding to salads. I also like Arzi's feta salad. It's big enough for two and the dressing has a little kick to it.

Doesn't meet your requirements, but this is my favorite:

spring mix
drizzle ranch
ground pepper
chopped boiled eggs
cheese
baby carrots
rolled, chopped deli ham and turkey
croutons

in that order

I made a great chicken caesar last week.

Romaine hearts, chopped up
Pan grilled some chicken breasts
In same pan, sauteed some garlic
Added both to greens along with some parmesean cheese
Tossed with Newman's lite caesar and added crutons at the end.

eta: added some avacado towards the end too, doesn't really belong in a caesar...but i love avacado

Quick, delicious salad.

Hot spinach salad, just nuke the dressing at work. Google will provide a decent enough recipe.

This one doesn't have chicken but you might want to try sometime. Simple and delicious.
1 bag Romaine lettuce
1/4 cup blue cheese
1/2 cup toasted chopped pecans
1 granny smith apple chopped

dressing..1/3 cup canola oil
1/4 cup apple cider vinegar
3 T sugar
1/4 t. salt & 1/8 t. pepper
Shake dressing in a jar before pouring over salad.

Probably not for today, but there is an excellent Thousand Island dressing in this post.
