Calcasieu Room- Private dining by Chef Donald Link (above Cochon)

Has anyone been to a lunch/dinner/reception here? It is several private rooms above Cochon. I am thinking about it for a rehearsal dinner.

I don't have much to add except that I'm jealous. I wanted mine there. I do know that the person you work with to set it up is very nice and helpful.

they had an affluent group of young men going up there the last time i ate at cochon

Went to a lunch there for LSU College of Arts & Sciences alumni about a year ago. I don't remember the rooms being that special but the food is usual Donald Link.

Well it is between this and Le Foret. While it is more expensive, they allow you to bring your own wine in with a small corkage fee. I haven't eaten there, I hear great things.

My dinner at Le Foret was the best meal of my life. Not kidding. Unfortunately, they fired the head chef, Jimmy Corwell, recently because the owner didn't want to in the same direction that Corwell did. Whatever that means. They say the chefs that worked uner Corwell are now running the kitchen.

I'll follow that Corwell guy wherever he goes and I really hope he stays around here.

Went to Le Foret today to check out the room and then ate lunch. The room was very nice and has giant windows that opened onto a balcony wrapping around the restaurant. Much nicer than the Calcasieu room. The food was excellent as well- just like I have heard. So thats where we have decided to have the dinner.

Awesome. I think I heard they have a rooftop available for parties (or a cocktail hour) as well.

Mimi is the new chef at Le Foret now. she is very talented.

They wanted Corwell to have more of a presence in the dining room during dinner, and he thought he was too good for that. He was a great chef

He thought he was too good for it? What does that mean? Maybe he wanted to stick to what he does...cooking and not shmoozing customers. Maybe he just doesn't have the personality to be out in the front. Most chefs like to stay in the back. I know, I'd rather him be cooking.

The general manager wanted someone that can also be seen in the dining room. That is just the kind of place it is. It comes with the territory. Corwell was a large part of the success and fanfare of the place, but his unwillingness to "schmooze", as you say, was the reason they are going in another direction. It's not an insult. That is just what happened.

Ok, he was a great chef for Le Foret.. He'll land on his feet.

Letting go of that kind of talent just blows my mind.

I hope he lands somewhere around here and not in Cali. I was really looking forward to going back for a special occastion.

yeah it's kind of crazy. The owners really dont have much experience in the restaurant business. But the GM is really good over there. Im sure he'll find someone. Like I said, the 2 chefs they have now are really talented. But they may need a bigger name to keep the momentum they have at this point.
