I have done something and i just need to get it off my chest.
My family is moving from our current house and all of our stuff has been packed up for about a week. Three days ago, we actually shipped it all and now we are living for 5 days on air mattresses and fast food.
I broke today, three days into five. I needed some kind of food that wasnt fast food so i went to walmart and.......
Bought a cheap pot, cheap wooden spoon, saltines, instant boil in bag rice (***duck***), and louisiana brand gumbo in a bag (***duck again***).
It took about thirty minutes in all and here is the confession, I really enjoyed it. I admit that it was not top shelf gumbo but it was completely worth thirty minutes and one dirty pot.

Nobody ever admits to using Minute Rice, jarred roux, or buying those prefab Savoies and John Folse entrees, but every damn WalMart in south LA is full of that stuff. Somebody's buying it.

I admit to using jarred roux. It's flower and oil. It can only be made so well, and I ain't got time for that.

I keep those Minute Rice cups of rice around for times when I'm the only one eating gumbo. They're very good and convenient.
Folse's crawfish bisque is okay for a craving. I've had it a few times.
And, yes, a few times a year, I doctor up some Easy Mac for a fast lunch.

Karys Roux in Ville Platte makes it better than anyone else can. We all know how to make a good roux, it's quite simple but why go through the trouble.
