I’ve bought a 1/4 cow from Simpson meats twice. Been very pleased.

I’ve purchased a 1/4 cow from someone and it was processed at the place you linked. They will go over with you what cuts to expect and have a check sheet for choices.

Just picked up a cow in Pontotoc, MS I split with a friend. Bought from another friend’s dad who farms in New Hope, MS. Chose more roasts than steaks and chose porterhouses over cutting into filets and strips. Half a cow is a lot of beef

Hope you have a big family that is hungry….this is not an option for most people….unless you split this with about 6 families it’s a ton of meat…. especially ground meat…. Think twice before you do this it’s a lot of money…

A half of a half will easily feed 2 adults for a year. Thing is, it keeps. I cooked a roast the other day that was marked 2019. It was fine.

Unless you have a big family, half of a half is a good place to start. Now, I have a friend who is in on the split and he gets a full half. Of course, his adult daughters raid his freezer a good bit.

Great suggestions all around. My only add is that make sure the processor the rancher uses will vacuum seal the meat vs. butcher paper wrap. Vac seal will keep much better for freezer storage and defrosting.

I’m all in on bulk buying beef. Have split an Akaushi with some friends and it was insane.

Best thing to do in my opinion is buy a half and then split that half with someone, if you buy a 1/4 you may get only front side or back side cuts.
Also if you can get an upright freezer. Chest freezers suck once something gets buried you never see it again.
