In step 4, add some sugar as well. The caramelized sugar will give a richer color, and of course a little bit of sweetness.

I made this tonight and when I went to make my rice there were bugs in the rice. I panicked and found a package of angel hair pasta in the pantry. Decided I had no choice besides running to the store but I had already started drinking my wine. Put it over pasta and was seriously surprised. Basmati rice can't be beat but this was really good over pasta. I let the sauce thicken up more than I normally would and it was great.

I'm glad you enjoyed it and like Indian food. I have spices sitting in my house. I'm going back home again in November and will be reloading them. If you need spices that I get from home. My mom makes them homemade. I can give it to you instead of throwing away. I can't promise how much I have since I haven't looked. I defintely have home grinded chili powder with garlic and spices. Let me know.

That looks awesome.

One question...does the dish need some salt? Do you feel the finished product needs it?

Also, I'd opt for chicken broth instead of water. And what about using coconut milk instead of whipping cream?

I'm saving this recipe. Thanks for posting!

I add salt to taste and always add salt after I plate it. I love to top this with a little salt so I hold back a little while seasoning in the pot.

I'm sure you could use chicken broth, I just haven't tried that yet. I don't always have it on hand. I'm also sure coconut milk would work but I don't know if I want that flavor in my butter chicken. It wouldn't be bad, I am sure.

I thought coconut milk was standard in most authentic currries, Thai or Indian. Am I wrong? It gives the slight sweetness to it without needing to add sugar, like another poster suggested.

Looks good. I cooked butter chicken for the LSU-Syracuse game a couple of weekends ago. What inspired it is that I bought a jar of buffalo ghee at Trader Joe's -- it's a clarified butter used in Indian cooking. I used this New York Times recipe

but used ghee in place of butter and pureed tomatoes in place of the tomatoes.
I think marinating the chicken overnight really boosts the flavor. I used bone in thighs with the skin removed.
