Brisket Taco How I make them

Half of a small brisket, small chuck roast, big onion and oil . Brown. Couple of cans Hatch Chilis, chipotle peppers with adobo sauce, a couple chipotle from my garden, a jar of my smoked/roasted homemade canned tomatoes, salt, pepper, beef base and water.







Bring to a boil, put lid in and into 275 oven for 3-4 hours.





Remove from oven, meat from pot and let cool a bit. Then shred.




Pour sauce into blender, add water to whatever thickness you like. Maybe a touch of salt, added juice of a lime and lime zest.




Sauce will keep for a month in icebox. Can add other peppers, tomatillos, avocados etc...


I thin some of it down then toss the meat back into it.

Good stuff. Freeze the meat in quart bags for future taco Tuesdays.

I put an X on the bottom of the tomato and cut the top core out, then put on the Big Green Egg with a low fire but choked down so it smokes a bit then let them go until you can peel the skin - like when you blanche them - depending on how ripe they are - probably 30 minutes or longer if they are holding up. If they are real ripe put them on a baking sheet or aluminum foil or pan so they don't fall through the grate.

Then you can do whatever you like with them - can them, squeeze the water and seeds out of them and make sauce, smoked tomato tartar sauce is something I like to make. I had so many this year I canned probably 35 pint and a half jars. Some sauce, some just quartered.

When you smoke them like on a sheet, add tomatillo's, garlic, onions and halved limes and whatever peppers you like, jalapeno, hatch etc...put all in a blender and make smoked salsa. Add salt.

How do you dress them up? Pickled onion, avocado, salsa, cilantro, raw onion?

I cut up an onion with cilantro and lime let sit for awhile and squeeze lime on them in corn tortillas. I do eat flour some but not as much. You can put more lime or a bit of just white vinegar in the sauce when you are blending it to taste to cut through the richness. And I like the sauced warmed with a little cold cabbage slaw on the taco.

My kids put cheese and avocado's and pico de gallo.

Go to bed Mom. You're drunk.

It's the flat so it was lean but yeah it is overcooked when it is shredded. I'm not shooting for Aaron Franklin. It's why you toss it with a bit of the sauce. It's gone though so someone liked it. I do it with the point but I ground it and another chuck for burgers.
