made the eggplant finally last night with fresh picked fruits from the garden. Incredible

I don’t know what the sorcery is here but it was the best fried thing I’ve ever eaten. I didn’t have buttermilk so I used half and half with a squeeze of lemon, and I used bagged corn flour mix with a little cornmeal mixed in. Fried in lard, came out perfect

I agree with you. Her method is so much better than frying slices of eggplant or green tomatoes. She uses it for fried mushrooms as well. Everything is crispy and not greasy at all. They hold the crispiness. It's rather amazing how well it works!

Exactly. I was obsessed with it for a week or two when this thread started.

After a few batches I started scooping the eggplant out with a spoon trying to make it shaped like a big fat oyster. Perfect shape - crispy edges and thicker creamy middle. Need a spoon that's sharp like a knife on the edges to make scooping easier.

Need to revisit.

That's interesting. I keep some cheap grapefruit spoons around for various reasons and that might work well for this.

Gris Gris - I finally got around to trying this method for fried chicken. It was probably the best fried chicken I've ever made, which honestly isn't saying much. As much as I cook, making really good fried chicken has eluded me.

The crust is thin but hangs on really well. The oil was older so the color is darker... will definitely try again with fresh oil.

For extra flavor, thinking of adding a buttermilk brine step and then air drying them completely before beginning her method.

Those look good!

I notice in her videos, her buttermilk is usually in a gallon container which means she must use a lot of it! However, when she fries, she just uses a small amount. I buy the smaller containers since I don't use it as often, but I definitely use more now than I did previously.

I made fried eggplant and green tomatoes tonight. Very good. I only had low fat buttermilk which worked but whole is better.

She made a sauce in the video that disappeared, I believe, that’s different from the sauce in another video. The sauce had buttermilk, mayo, sour cream, dry ranch seasoning and horseradish. I made it to taste. We liked it a lot and I’m not the biggest ranch fan.

seriously folks go make this

I don’t ever have buttermilk so I used half and half and lemon juice again tonight. Didn’t have flour so I used shrimp fry and some corn meal. The shrimp fry is basically corn flour. It was amazing; again the best fried thing I’ve ever eaten.

It’s the technique not the ingredients…wet the eggplant with dairy then toss with the dry. There should be no pooling of liquid and no sticky batter. Fry as hot as you like. Foolproof and insanely delicious. I made a dipping sauce with cousin’s tomato dressing, sour cream and dill relish

ETA: Just tried some mushrooms using the same method - damn good, too.

I can't remember if I made the mushrooms once or not, but I need to.

Too crispy can’t taste the eggplant. Prefer strips or circles.
